What ‘Seasonal’ means to The Royal Stone

When asking Chef Chase Edrington about what seasonality means to him, he says “Seasons are constantly changing and not just four times a year. There are life spans of ingredients within seasons. Recipes must change along with them to respect that and keep the interest of the guest and cook. At Royal Stone we pride ourselves in being sensitive to these changes in order to consistently provide the most wholesome version of our menu possible.”

Sous Chef Sara Shannon further explains that, “you shouldn’t have to manipulate a fruit or vegetable to make it taste better. It should shine on its own. When something isn’t in season you have to do so much to it to make it taste good and we believe that less is more when it comes to refining our menu.”
